My friend made these and I couldn't believe they didn't contain any sugar or grains. These are very high in fiber and the cinnamon helps regulate blood sugar and appetite.
Ingredients:
4 eggs
1 apple, peeled and diced small
1 cup apple sauce
1/2 cup coconut flour
1/4 cup of coconut oil, melted
1 TB cinnamon
1 tsp baking soda
1 tsp vanilla
2 TB honey
1/3 cup walnut pieces (optional)
Whisk eggs in a large bowl. Add the remaining ingredients and stir to combine. Bake at 400 degrees for 12-15 minutes. This makes 12 muffins.
