Fruit & Nut Cereal Bars





1/2 cup honey (or other syrup like cane or brown rice)
1/2 cup peanut butter (JIF creamy or Whole Foods brand)
1/3 cup brown sugar (Domino’s Light Brown Sugar)
3 cups gluten free rice krispies cereal (I use Erewon cereal)
¼ cup organic raisins

¼ cup dried cranberries
¼ cup dried cherries
1/8 cup almonds or peanuts (optional – I cut the almonds in half)
2 TB sunflower seeds
1 TB flax seeds or ground flax seeds


1.  In a large sauce pan, heat ½ cup of honey, ½ cup of peanut butter, and 1/3 cup of brown sugar, stirring frequently. Stir on low-medium heat until melted and combined. Allow to cool for a few minutes.


2.  Add all the ingredients but the cereal and mix. Then add the cereal and stir until mixed thoroughly.

3. Pour into a 13 x 9 greased pan (I use coconut oil) and use a spatula or your hands to press down.

4. Let cool for 30 minutes before cutting. Place in the fridge or freezer if you can't wait that long!  


Great snack or breakfast on the go.  These have a rice krispy taste and texture to them.  You can make these with any ingredients you want.  If you use chocolate, add about ¼ cup of chocolate chips or less.  They will melt down completely.  If you want them in whole pieces, wait till they cool completely, then push them on to the top.  


These can fall apart somewhat. I like to store mine in the freezer. They defrost quickly and hold together better. You could also store them in the fridge, but it's not necessary.

(Don’t feed this to a baby under 1 as it contains honey and nuts.
